The Best Fried Goat Cheese Pecan Salad (GF)

It’s been super crazy around here with Coronavirus madness, racism, protesting, and more. Sometimes I get overwhelmed by it all, especially because I have two brown boys who I have to chat with about race and injustices. It hasn’t been fun, and I have broken down on several occasions. BUT the response from our nation and the way that people have come together has been super incredible. As a biracial family, the Black Lives Matter impacts us heavily. I’m black. My brothers are black. My nephews are black. My kids. Well society will consider them black. And so sending my boys out into the world with all of the race relations and injustices was terrifying to be honest. BUT my hope will continue to be in Jesus. Part of my “therapy” in how I cope with the crazy of the world is cooking and coming up with delicious, nutrient dense, and easy recipes for the busy mama or woman! The Best Fried Goat Cheese Salad

INGREDIENTS:

  • 1 small package of goat cheese (we get ours from Fresh Market)

  • Gluten Free Flour and/or Almond Flour (I use mostly gluten free flour with a little almond flour. You don’t have to have both because they can be pretty pricey).

  • 1 egg (mixed)

  • 2-3 fresh radishes (sliced)

  • Avocado, Extra Virgin, or Grape seed Oil

  • Fresh Green Leafy lettuce

  • Fresh pecans (1 handful, sliced)

  • Dried Cranberries (just a touch)

  • 1 lime (cut in half)

  • Seasoning salt

  • Salt

  • Pepper

Directions:

Heat oil in saute pan or pot on medium high heat for about 10 minutes. Enough oil for goat cheese to be submerged. In bowl, add gluten free flour (and optional almond flour). I don’t measure anything. So I would say 1 cup of gluten free flour, and 1/3 cup of optional almond flour if I had to guess. Add more gluten free flour if needed. Side bar: I remember cooking in the kitchen with my grandma, and she never measured anything. So when I’m coming up with recipes, I eyeball mostly everything. It’s a blessing and a curse. :)

So next add salt, pepper, seasoning salt to flour. Cut up goat cheese into tennis ball sized bites. Try to keep the balls all the same size for consistency. Coat balls with egg mixture, then cover in gluten free flour. Repeat with all the balls, then cook goat cheese bites 2-3 minutes or until golden brown Put on paper towel. In a salad bowl. Layer with lettuce, pecans, cut up radishes, cranberries, then top with fried goat cheese. Then add a squeeze of the half of lime all over salad. Then add a touch of extra virgin olive all over the salad. Enjoy!
