The Best Vegan Lo Mein With Vegan Spring Rolls
My husband came to me a few weeks ago saying he wanted us to try “plant based". Now anyone who knows my amazing husband knows that he doesn’t like green anything (outside of green beans), so I was very shocked to say the least! But I prefer plant based and was an 80/20 vegan for 2 years (only eating meat on Sunday and Tuesdays….yes I know…I’m a bit crazy like that). So eating vegan/plant based vegan was not a new concept for me. I feel better, lighter, healthier, and my skin always feels so amazing. I have more energy, I don’t feel sluggish, and my mental clarity seems to really benefit from plant based eating. So here’s one of my favorite vegan recipes I created!
Course: Main Dish
Prep Time: 15 minutes
Cook Time: 15-20 minutes
Servings: 2-4 (depending on if you have good eaters)
INGREDIENTS:
1 Large Zucchini
2 cups of Shredded Carrots
1 half yellow onion (diced)
2 cups of mushrooms (diced)
3 cups of bean sprouts
1 package of spring roll wrappers
48 fluid ounce bottle of Vegetable oil and Extra Virgin Olive oil
garlic salt
salt, pepper
red chili paste
soy sauce
DIRECTIONS:
Spiralize zucchini or buy already spiralized zucchini. I purchased my Spiralizer off Amazon. The brand is Paderno. Click here to grab now (affiliate link).
After you spiralize your zucchini, put your pan on medium to high heat. Add diced onions and diced mushrooms. Cook for 3-4 minutes. Add garlic salt, and salt, then add shredded carrots. Cook for another 3-4 minutes or until the carrots are nice and soft. Then add beat sprouts. Add salt, pepper, garlic salt. Add soy sauce (grab low sodium soy sauce if needed). Cook for 4-5 minutes. Set half of this aside for Vegan Spring Rolls. Add zucchini to the other half. Add salt, pepper, garlic salt, soy sauce and red chili paste. I like to add a few spoons of paste. Add more if needed after taste testing. Cook for 4-5 minutes, but you don’t want your noodles “too soft”. Set aside.
For Spring Rolls: Put vegetable oil in frying pan/pot on high heat for 10 minutes. While heating, take wrappers out, and lay individually on counter. Add a spoon of the bean sprout, onion mixture to each wrapper. Then fold like a mail envelope. Or check my Youtube Video here! Put spring rolls into hot grease gently, slowly, one by one. I usually cook around 4 to 5 at a time depending on pot size. Cook for 4-5 seconds until golden brown. Take off stove and put on paper towel to drain excess oil.
Enjoy with bowl of Vegan Lo Mein! This was by far one of my favorite vegan dishes yet!
