The Best Vegan Red Cabbage Bowl

So my husband and I went vegan about 7 weeks ago, and it was very hard at first. I missed Chick Fila number 1 with Lemonade. I missed having a burger after church each Sunday, and I missed eggs and cheese and all of the things. But we really wanted to focus on a plant based vegan diet, and I knew the benefits outweighed my desire for Chick Fila Chicken Sandwich. So here is one of my favorite vegan recipes right now!


Course: Main Dish

Prep Time: 10 minutes

Cook Time: 15-20 minutes

Servings: 2-4 (depending on if you have good eaters)




INGREDIENTS:

  • 1/2 Red Cabbage   (Cut into shreds) 

  • 2 cups of Shredded Carrots

  • 1 half yellow onion (diced)

  • 2 cups of mushrooms (diced) 

  • 1 bag of bean sprouts

  • 1-2 TBSP of Extra Virgin Olive oil

  • garlic salt

  • salt, pepper

  • soy sauce

  • 1-2 cups green onions (diced)

DIRECTIONS: 

Add olive oil in pan, put on medium high heat in a saute pan. Add shredded cabbage. Cook cabbage for 7-8 minutes, then add shredded carrots and onions. Add salt, garlic salt. Cook for 5-6 minutes, stirring occasionally. Then add mushrooms, and cook for 5 minutes. Add soy sauce, salt, garlic salt. Add bean sprouts, then add soy sauce again. Stir. Cook for 2-3 minutes then.
