Gluten-Free Crispy Potato Tacos
So I am in week 2 of Transform 20 of Beachbody, and I feel pretty incredible! But more so than anything, I’ve really tried to clean up my diet. Owning two breakfast/brunch restaurants (Eggs Up Grill) really takes a toll especially in the busyness of life, homeschooling four kiddos, and being the ultimate taste tester of the menu! Our grilled blueberry are to die for, so I’ve really had to clean up my diet. We were vegan for about 4 months, and we felt pretty good on it! But I’m not certain it’s a lifestyle we can choose forever with our four kids and restaurants! So I really wanted to focus on cleaning up my diet while enjoying the foods I love in moderation! With that, I feel great when I’m not eating processed sugar and gluten. So this month, I am really focusing on gluten-free sugar free recipes! Now that we are all quarantined because of the Coronavirus, it has been fun cooking healthy meals again!
So here is one of my faves!
INGREDIENTS:
1-2 small of Red Potato (Cut into bite sized pieces)
1/3 cup of yellow onion (diced)
Shredded cheese
1/2 cup of Red Cabbage sliced
Romaine Lettuce Wraps
1-2 TBSP of Extra Virgin Olive oil
garlic salt
salt, pepper
seasoning salt
1-2 cups green onions (diced)
Directions:
Heat pan to medium high heat. Add oil. Season potatoes with seasoning salt and garlic salt, salt, and pepper! Cover and cook on medium to high heat covered for 10-12 minutes. Stir as needed so it doesn’t stick to the pan. Add diced onions to pan. Cook for 4-5 minutes with potatoes covered. Add salt and pepper. Set aside. Add shredded cheese to lettuce wrap. I like to put 4 lettuce wraps on a plate for myself! :) So add the cheese, then layer the red cabbage on the cheese. Then add the cooked potatoes and onions! Top with a sprinkle of cheese and (green onion). It adds a little freshness, but it’s totally optional! Enjoy! It was so yummy!
