Easy Shrimp Fried "Rice"
So I just finished week 2 of Transform 20 of Beachbody, and I feel pretty incredible! But more so than anything, I’ve really tried to clean up my diet. Owning two breakfast/brunch restaurants (Eggs Up Grill) really makes it hard to eat healthy at times. I want to eat a grilled Blueberry muffin daily. Or our amazing french toast! Yummm! But since I am trying to eat healthier, I’m really focusing on whole foods, easy recipes, clean ingredients! This one wasn’t as “clean as I wanted it to be”, but because of the Coronavirus I had to improvise with some of the usual ingredients! So here is one of my faves!
INGREDIENTS:
12-15 Deveined and peeled Shrimp
2 Eggs
Butter or Olive Oil
1 Package of Steam in Bag Cauliflower Stir Fry (I usually make my own cauliflower and stir fry but because we are suppose to stay in house during this Coronavirus, I didn’t have the items to make it…check back soon for a homemade cauliflower rice recipe)
Low Sodium Soy Sauce
garlic salt
salt, pepper
seasoning salt
1-2 cups green onions (diced)
Directions:
Heat pan to medium high heat. Add butter or oil. Add 2 eggs to pan. Cook and scramble them. Add salt and pepper and put to the side. Heat cauliflower stir fry in microwave using instructions! Season shrimp with salt, seasoning salt, garlic salt, and pepper! Add Cauliflower Stir fry to shrimp. Add salt, pepper, garlic salt, seasoning salt. Then add soy sauce. Stir. I like to top with a sprinkle of green onions! Enjoy! It was so yummy!
