Easy Shrimp Fajitas

So I just started week 3 of Transform 20 of Beachbody, and I feel pretty incredible! But more so than anything, I’ve really tried to make healthier meals! Owning two breakfast/brunch restaurants (Eggs Up Grill) really makes it difficult to eat healthy when I want to eat all of the breakfast gluten and sugar filled goodness! So here is one of my faves!

Easy Shrimp Fajitas

INGREDIENTS:

  • 12-15 deveined and peeled shrimp 

  • butter or olive oil

  • red cabbage diced

  • 1/2 cup of diced onions

  • Taco Seasoning

  • 1 avocado sliced

  • 1-2 soft tortilla shells

  • garlic salt

  • salt, pepper

  • seasoning salt

My Daughter tries to steal a shrimp! Hahaha

Directions:

Heat pan to medium high heat. Add butter or oil. Add onions to pan. Cook on medium to high heat for 4-5 minutes. Add salt and pepper and put to the side. Season shrimp with salt, seasoning salt, garlic salt, and pepper! Add shrimp to pan with onions. Cook for 5-7 minutes or until pink , then add taco seasoning and cook for another minute! Put tortillas on plate. Spread 1/2 of the avocado on the tortilla shells ( leave 1/2 for topping). Add shredded cabbage. Then top with shrimp and onions. Add sliced avocado. Enjoy! I normally would add peppers, but we are suppose to stay inside mostly so I haven’t been able to go out much!
