Salmon Tacos with Mango Avocado Salsa!

So I just finished week 4 of Transform 20 of Beachbody, and I feel pretty incredible! But more so than anything, I’ve really tried to focus on nutrition. When we opened our first restaurant Eggs Up Grill (Killian), I admittedly, I gained 10 pounds taste testing everything on a weekly basis. Such great breakfast and brunch food if I do say so myself! :) Now that we are in quarantine because of the Coronavirus, we are forced to cook more meals which has been super fun! So here is one of my faves!

Easy Shrimp Fajitas

INGREDIENTS:

  • 2 servings of 3-4 ounces of fresh salmon (My husband got a ton from Fresh Market, and I cut them into 3-4 ounces to freeze)

  • butter or olive oil

  • 1/2 mango diced

  • 1/2 cup of diced onions

  • 1/2 cup of salsa (because of the coronavirus I didn’t have the ingredients to make my own)

  • 1/2 avocado diced, then 1/2 avocado for taco (sliced)

  • 2 soft tortilla shells

  • garlic salt

  • shredded lettuce

  • Cajun Seasoning

  • seasoning salt

  • green onions

My Daughter tries to steal a shrimp! Hahaha

Directions:

Heat grill. Add salt, pepper, seasoning salt, garlic salt, cajun seasoning to both sides of salmon. Put salmon on grill skin side down. Cook to desired pinkness. I like mine well done so I cook mine 5 minutes on each side! Then I take off the salmon skin with a knife. Add season that side again. Put to the side. Add diced onions, diced avocados, salsa, diced mangos to bowl. Stir. Spread 1/2 of the avocado on the tortilla shells. Then add shredded lettuce. Then add salmon and mango avocado topping! Top with green onions! Enjoy!

NOTE: I normally would add tons of fresh ingredients like lime, cilantro, etc, but because we are trying to stay indoors mostly because of the Coronavirus, I went with the ingredients we had on hand and boy oh boy this was so good!
