Sweet Potato Salmon Lettuce Wraps
This month, we’ve been on a budget, pay off debt kick, so I’m really trying to meal plan and stick to eating at home mostly. We have tons of salmon in the freezer, so I’m super inspired to save money by creating salmon meals until I have no more salmon left! :)
Usually I make separate meals for my family because I’m on whole30, so I’m a bit stricter with my diet. My four kiddos and hubby love their carbs and sweets, so I just plan separate meals for them right now. Maybe one day, I will cook one meal for everyone, BUT for now, I don’t mind making two meals!

Sweet Potato Salmon Lettuce Wraps
The best sweet potato salmon lettuce wraps AND it’s keto and whole30 approved!

Prep Time: 5-10 minutes
Cook Time: 15-20 minutes

INGREDIENTS:
Salmon Kabobs (20 pieces)
1-2 large sweet potatoes (peeled and spiralized)
2 Avocados (sliced)
2 Tablespoons garlic salt
1 Tablespoon Salt/Pepper/Cumin
4 Tablespoons Extra Virgin Olive Oil or Coconut Oil
2 Tablespoons Red Wine Vinegar
1/4 Cup of Green Onions diced
4 drops of Lemon Vitality (Young Living)
Lettuce Wraps
DIRECTIONS:
Add Extra Virgin Olive Oil to pan, and put on medium/high heat. Put in spiralized sweet potatoes. Add cumin, salt, pepper, and garlic salt. Cook for 5 minutes, then take move around with a spoon. Cook for 5 more minutes. Keep on low heat for a few minutes, then set aside. Then mix red wine vinegar, extra virgin olive oil, garlic salt, salt, pepper in a bowl. Add salmon kabobs to bowl, covering all of them with marinade. Put on grill. Once hot, add salmon to grill. Add leftover marinade to salmon on the grill. Turn over at 5 minutes. Let cook for 5 minutes. Then take off. For avocados, slice, then add 3-4 drops of lemon vitality oil. On a serving dish, grab lettuce wraps, then top with spiralized sweet potatoes, then layer with 2-3 pieces of salmon, then add avocado, then top with a little spiralized sweet potatoes. Repeat with remaining salmon and lettuce wraps. Enjoy this keto friendly, whole30 approved delicious meal!
